 Hello!  I am Andrea Roelen, your Hope Central cooking class instructor.   I am excited to be with you as part of HopeCentral's Cooking Up Memories summer program.  I am a wife, mother of two children, and a teacher and volleyball coach in the Northshore School District.  I have cooked all my life, learning from talented cooks such as my own mother to chefs in countries such as Italy, Peru, and Thailand.  I have taught classes to adults and kids of all ages and I am eager to teach you as well.   During this online class, I hope to educate and motivate you in the kitchen so you can feel confident and comfortable making this healthy and whole food menu for your family.  We will discuss some basics of knife safety and learn some kitchen tips and techniques as you prepare the menu right along with me.  I look forward to seeing you online for class and hope you will enjoy this cooking experience with your family.

Curious about Calzones?

A calzone is a “pocket of pizza”! Just like pizza, calzones originated in Italy. Calzone can be roughly translated to “pant leg” as they were designed to be an “on the go food” as they are personally sized and intended to be eaten without utensils. What is fun about calzones is there are no rules to what you put inside! We hope you enjoy some fun finger food and get creative with what you put inside!

Calzones & Cabbage Slaw Salad

Ingredients

Calzone Dough:

- 2 1/2 cups of flour

- 2 3/4 tsp. of baking powder

- 1 tsp. of salt

- 1 tbsp. of oil

- 3/4 to 1 cup of water

- egg wash

Calzone Toppings:

These are up to your families’ taste buds! Below are some ideas or suggestions!

- cheese (dairy or non-dairy options)

- tomato sauce or pesto sauce

- pepperoni, sausage, chicken, ground turkey

- black olives, onions, mushrooms, bell peppers

- Spinach, arugula, kale, basil, herbs

Cabbage Slaw

- 2 to 3 cups of finely chopped (purple or green) cabbage

- 1/2 to 1 cup of grated carrots

- 1/2 to 1 cup chopped peppers

- 1/2 to 1 cup chopped kale (optional)

- 4 tbsp. of oil

- 4 tbs. of rice vinegar

- 1 to 2 tbs. of soy sauce

- 2 to 4 tsp. of honey

- 1 to 3 tsp. of grated ginger

- Dash of hot sauce (if desired)

- salt and pepper to taste

Kitchen Equipment

- Two mixing bowls

-Measuring cups & spoons

- Surface to roll out dough
